Steph's Ranger Cookies

I keep telling people I'll get them my yummy cookie recipe.
Well here it is!!

Ranger Cookies
Adapted from Better Homes and Gardens

They said the dough yields 48 cookies; I got exactly 36.

1/2 cup butter or margarine
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder *******
1/4 teaspoon baking soda *******
1 egg
1 teaspoon vanilla
1-1/4 cups all-purpose flour ( half flour and half flax seed or wheat germ or both)
1 cup rolled oats
1/2 cup sweetened flaked coconut
1 cup mixed dried fruit (I don't do this)

In a medium mixing bowl beat butter with an electric mixer for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda; beat until combined. Beat in the egg and vanilla. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Stir in oats, coconut, and fruit.

Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.

Unless you just want to eat it, then stick the rest in the fridge. :-)

Bake in a 375°F oven about 10 to 12 minutes or until edges are golden brown. Cool on cookie sheet for 1 minute. Transfer to a wire rack; cool.



***** I read in one recipe if you are using self rising flour to nix any baking powder and or soda. I never use these in my recipes when using self rising flour now.

It breaks my heart

Keith and I watched The Boy in the Striped Pajamas last week.
It was an incredible story of one family during WWII told through the eyes of
the 9 year old son.
I know the holocaust was terrible. I have done papers on it in high school,
I've read books about it and have seen movies. None of that comes even close to how this movie touched my heart. And then broke it into a million pieces.
(There wasn't anything gross to watch. It was all implied. )
What tears me up is that people actually felt that another human being was worth
so little, or nothing at all. This continues to happen even now.

What happened to evolution? Aren't we supposed to be changing for the better?
God's heart must be breaking a zillion times more than mine. Look at what's happened to His children. We have let Satan in to do his darnedest and it seems like
there is no willingness to kick him out!

Dear Jesus,
I pray for a revival in the hearts of mankind.
Let all of us seek Your love and guidance.
Help us to kick the devil out so there is only room for You
to fill us to overflowing.

Wii fun!!

Keith had a great idea today. He thought we should have a Wii fun night after Josh went to bed.
He was even thinking ahead and told me to make sure the batteries for the remotes were charged. I would not have thought of that. I mean really, if you aren't using it, they shouldn't be dead, right? ;-)

Crap. I don't like how this has to be.

It's sad, sad day.
I was at my WW meeting again and am up 2#. Which really screws up the loss I had the week before.
I finally figured it out. Just saying I'm on a diet or eating better or having a gym membership does not, in itself, make you lose weight. This also applies to only having Jillian Michaels 30 Day Shred dvd.
I actually have to get involved in this process.
I'm going to go get myself a single serving of 1/2 the fat chocolate ice cream ( 3 WW points ) and call it a night.
Tomorrow I start anew. I WILL track my food intake and I WILL exercise either here or at the gym.
Next WW meeting I WILL get my 5# sticker!!!
For now, I'm off to the freezer!

Oh Fudge!

So Monday night was weigh in at the Weight Watchers meeting.
Crap.
I was doing ok so I slacked off. And it showed!!

Now I'm down a total of .2 pounds since I started. Not two pounds, but point two pounds.

I guess it's time to start using those darn tools and tracking what I eat and oh yeah, eating those fruit and veggie things. ( and not those 7 point candy bars. )

At least my hair looks good.

And we press on!
